Calcium citrate (E 333) is the calcium salt of citric acid and is also known as tricalcium citrate. It is a white, odourless and tasteless powder with a crystalline structure. Calcium citrate is poorly soluble in water; however, its solubility increases at lower temperatures and in acidic environments (pH < 7).
Applications of Calcium Citrate
In the food industry, E 333 is used in a wide range of applications. Due to its properties as an acidity regulator, acidifier, emulsifying salt and complexing agent, it is found in numerous products.
Calcium citrate is used in a variety of foods, including:
- Dairy products: dried milk, condensed milk, milk powder
- Confectionery & desserts: gels, fruit spreads, puddings
- Preserved foods: canned fruit and vegetables, pre-cut and packaged fruit and vegetables
