Xylitol Birch Sugar
Xylitol is a tooth-friendly, low-calorie sweetener and a good alternative to household sugar. Xylitol is also known as birch sugar and is a sugar substitute and food additive (E 967). The white granules sweeten in a similar way to sugar, but have a 40% lower calorific value. Xylitol has a very sweet flavour and develops a cooling sensation on the tongue, similar to that of menthol. It enhances the taste of fruit flavours and especially mint flavours. Xylitol has hardly any effect on blood sugar and insulin levels and is therefore suitable for diabetics. Our birch sugar is produced in Finland.
Although xylitol is found in birch, it is not only extracted from birch, contrary to what the name birch sugar suggests. Industrially, xylitol is usually produced from xylose (so-called ‘wood sugar’). In addition to birch wood and other woods, agricultural products from the processing of maize, wheat or rice are often used as raw materials.
Applications
Xylitol is easily soluble in water and is resistant to boiling and baking. It can be used instead of sugar in both baking and cooking, including for confectionery, dairy products, chocolate products, baked goods and spreads. The only limitation is yeast, as it cannot utilise xylitol. Birch sugar is slightly more heat-stable than sugar and only caramelises when heated to over 200 °C for several minutes. Xylitol is also used as a sweetener in medicines, food supplements, toothpaste and chewing gum.
Notes
Xylitol can have a laxative effect if consumed in excess. Xylitol is toxic to some animal species, such as dogs. Xylitol should be stored in a dry, tightly sealed container at temperatures below 25 °C.
