Guar Gum Powder 3.500 cps
Guar gum is a plant-based food additive (E 412) that is mainly used as a thickening and gelling agent. Even small amounts of guar gum are sufficient to give liquids a viscous consistency. The viscosity of this guar gum is 3500 cps. Guar gum becomes thinner under the influence of shear forces (e.g. shaking, stirring). However, as soon as the shear forces subside, the viscosity of the product increases again. Guar gum is easily soluble in both hot and cold water.
Applications
Guar gum is used in foods such as soups, sauces, jellies, jams, tinned vegetables, tinned fruit, mixed milk drinks, desserts and ice cream. In ice cream and dairy products, it ensures a smooth and creamy texture and reduces the formation of ice crystals. In soups, dressings and sauces, it improves thickening and acts as a stabiliser. In meat products, guar gum is used as a binding agent to absorb free water. In baked goods, it is mainly used to keep bread fresh.
Notes
Guar gum can be used in combination with other thickening agents such as xanthan gum or locust bean gum. We recommend not using more than 2 % in foods. For the preparation of soups, for example, approx. 0.8 % is sufficient. The use of guar gum in the production of organic foods is possible (in compliance with the limitations), but this is conventional quality. Guar gum should be stored in a dry, cool and well-sealed place.
