Application
Gum arabic is a food additive approved under the number E 414 and is used in food as a thickener, emulsifier and stabiliser. It prevents the formation of crystals and thus has a stabilising effect. This property is used, for example, in gummy bears, in which sugar crystals should not form. In addition, frozen products form fewer ice crystals. In beverages, gum arabic is used as an emulsifier, stabiliser of emulsions and suspensions and as a foam stabiliser. In confectionery, it serves as a film former for glazing and coating agents, adhesives and binders, texturisers, gelling agents and anti-crystallising agents. In pharmaceuticals, gum arabic is used as a coating agent, binder and texturiser for pastilles and tablets. Other possible applications are: Emulsifier, stabiliser and texturiser in cosmetics and personal care products, emulsifier for printer ink, film former or coating agent for industrial applications.
