Xanthan (E 415) is used as a binder, thickening agent, stabiliser and emulsifier.
Xanthan gum is a very effective gelling agent, requiring only a small amount to achieve the desired effect. It is produced through the fermentation of starch, making it distinct from other gelling agents like gelatin, which are derived from animal products. This makes xanthan an excellent vegan alternative.
Xanthan dissolves easily in cold water, forming a slightly milky, gel-like liquid. Unlike other gelling and thickening agents, xanthan can also be used in acidic environments, such as in vinaigrettes.
As a low-calorie thickener, it is suitable for both hot and cold dishes. Thanks to its stabilising, thickening, and emulsifying properties, xanthan evenly distributes various ingredients in liquids, which is why it is added to many foods and cosmetics. In the food industry, xanthan is used in products such as baked goods, soups, sauces, jams, and jellies, as well as in canned fruits and vegetables and ice cream. The quality offered here has a particle size of approximately 80 mesh.
