Sodium Benzoate E 211 – Preservative for Food & Cosmetics
Sodium Benzoate (NaC₇H₅O₂), also known as the sodium salt of benzoic acid, is approved in the EU as additive E 211 and produced in Europe. It is a white, odourless granulate that dissolves readily in water and is particularly effective in acidic environments (optimum effect at pH < 3.6). In such conditions, it acts fungistatically (against moulds and yeasts) and bacteriostatically (against bacteria), reliably inhibiting the growth of microorganisms and thereby extending the shelf life of sensitive products.
Applications
- Food: Sodium Benzoate is ideal for liquid and semi-liquid products, as it dissolves easily and has little to no impact on flavour or texture. It is often used in combination with acidulants such as citric acid, or directly in acidic foods – for example in soft drinks, fruit preparations, or dressings. Typical areas of use also include beverages, sauces, spreads, and confectionery.
- Cosmetics & Personal Care: In shampoos, creams, or oral care products, it serves as a preservative and masking agent that helps neutralise unpleasant odours from other ingredients.
- Technology & Industry: Sodium Benzoate is also used in technical applications, for example as a component in propellant formulations for pyrotechnics.
What Makes Sodium Benzoate Different from Other Preservatives?
Sodium Benzoate stands out from other preservatives due to its high water solubility and broad effectiveness against bacteria, yeasts, and moulds. While Potassium Sorbate (E 202) is also highly soluble, Sodium Benzoate offers slightly superior performance in certain applications. In addition, it is often chosen for specific cosmetic formulations, as it not only acts as a preservative but also helps to mask unwanted odours from other substances.
When considering the best preservative, it is worth noting that Sodium Benzoate combines well with other preservatives (including Potassium Sorbate). Such combinations can provide even greater shelf-life stability while allowing for lower overall dosages of each substance.
Notes
When used in food, the permitted maximum levels must be observed.
