Cream of Tartar - Potassium Bitartrate E 336i

Cream of tartar is a leavening agent that is a by-product of the storage of wine or grape juice. It is a white, crystalline powder that is also known as the salt of tartaric acid or potassium bitartrate.

Our cream of tartar powder comes from natural sources in Spain. In the EU, cream of tartar is listed under the E number E 336 (together with potassium tartrate). It is halal, vegetarian, gluten-free, kosher-certified and vegan.

Use of cream of tartar

Cream of tartar is mainly used in the food, wine and cosmetics industries: 

• In the food industry, cream of tartar is often used as a stabilizer and leavening agent.
• In wine production, cream of tartar regulates the acidity and improves the stability of the wine.
• In the cosmetics industry, cream of tartar is used as a thickening agent and pH regulator.

In addition, cream of tartar is a natural agent for cleaning stubborn stains. Tartar is also used in naturopathy.

Cream of tartar for baking

Cream of tartar alone is not baking powder. Only in combination with sodium hydrogen carbonate does cream of tartar become the well-known cream of tartar baking powder. A major difference between cream of tartar baking powder and baking powder is the acidifying agent. Cream of tartar baking powder contains natural tartaric acid, whereas conventional baking powder uses phosphates. This makes it a popular alternative to conventional baking powder.

In the kitchen, it is also used to stabilise egg whites and beaten egg whites in meringues (the world-famous almond macaroons).
